• Melon & Cucumber Gazpacho

Gazpacho is a cold soup that Italians serve in summer. The original recipe is made with tomatoes but this one with melon and cucumber is really good too! Ingredients for 4 glasses: 1 melon 1/3 cucumber 1 spring onion 2 basil leafs 2 country ham slices 1 tablespoon olive oil 1 teaspoon balsamic vinegar 2 salt pinches 4-5 grounds of pepper mill Recipe: Peel the cucumber and remove the melon from its skin. Cut in big pieces and place in a blender. Cut the spring onion in big pieces too but keep a little part of the green for the topping of your glass and chop it. Place the spring…

  • Bruschettas

Bruschettas are Italian toasts made with tomatoes and garlic that people use to have for aperitif or starter. Here is how I like to cook them: topped with meat, fish or cheese… For the bread, select a farmhouse bread or ciabatta, you need big slices with a lot of crumb (you can also make your own as we did). For topping, I made this recipe with Serrano ham which is a country ham but it is also very good with anchovy or only mozzarella cheese if you want a veggie version. Ingredients: 8 slices of bread 4 tomatoes 3 garlic cloves 5 basil leafs 1/2 shallot 4 country ham slices…

  • Spring Rolls

Spring rolls need a little bit of time to prepare but they are so healthy and fresh… Moreover, you can add almost everything you want inside! I made some with chinese and red cabbages, mung bean noodles, chicken ham, mint and basil. You can do it totally veggie by removing the ham. Ingredients for 10 rolls: 10 rice papers 100 g mung beans noodles 260 g red cabbage 50 g chinese cabbage 3 chicken ham slices 10 mint leafs 5 basil leafs 3 tablespoons chinese sauce 1 tablespoon Maggi liquid seasoning 1 teaspoon honey 1 teaspoon sesame seeds Recipe: Boil water in a saucepan and add the mung beans noodles.…

  • Okonomiyaki

Do you know Okonomiyaki? This a super Japanese recipe from Osaka and Hiroshima in which you can add a lot of ingredients to vary the taste. This is my husband who discovered it a few months ago (yes he loves to cook too, lucky me). In this one, we chose to use bacon and parmesan but you can make it veggie and dairy free if you do not use those ingredients. The dough remains the same but the vegetables you add can vary as you like and this is what I like in this recipe. Thanks to this, you can do it all year long using fresh and seasonal products.…
