Cupcakes

There is something I will always remember from Montreal: Itsi-Bitsi’s cupcakes! Unfortunately, they are closed now, but it remains a good souvenir… When I came back to France, I haven’t been able to find any place for cupcakes so I decided to do mine. Here is a simple recipe with butter icing that you can color the way you like.

Ingredients for 6 cupcakes:

  • Cakes:
    • 1 egg
    • 50 g sugar
    • 50 g butter
    • 60 g flour
    • 6 g baking powder
    • 6 g vanilla sugar
    • 1/2 teaspoon vanilla extract
    • 40 g chocolate
    • 2 tablespoons water
  • Icing:
    • 2.8 oz butter
    • 9.8 oz icing sugar
    • 2 teaspoons rice milk
    • food colouring (the color you want)

Recipe:

Preheat the oven at 356°F (180°C). Melt the butter in saucepan and reserve. Beat the egg, sugar and vanilla sugar with a whisk until blanch. Add the butter and vanilla extract and beat. Sieve the flour and baking powder and add to your preparation still beating. Place paper moulds in your muffins baking pans. Pour the preparation in 3 paper moulds. In a saucepan, put the chocolate and water on the burner until liquid. Add it in the preparation kept. Pour the chocolate preparation in the 3 other paper moulds. Bake in the oven for 20-25 minutes. When baked, remove from the oven but let cool. Prepare the icing in different bowls for different colors. For 2 different colors, put in each bowl: 1.4 oz butter and beat with the whisk. Add little by little 5 oz icing sugar still beating. In the end, add 1 table spoon rice milk and the food colouring and beat. Do the same in the other bowl with another color. Place a star shaped pastry tube in a pastry bag and pour the icing from the first bowl inside using a spatula. Decorate 3 cakes holding straight the pastry bag and pressing slowly on it while doing circles from the outside to the inside. Using another pastry bag or washing the first one, pour the icing from the second bowl and do the same on the 3 other cupcakes. You can dust them with sugar sprinkles.
