Corn Soup

Autumn is my favorite season for soups, you can still use summer vegetables while the weather is slowly cooling down, so why not cooking a corn soup? This recipe is not mine but comes from a friend, I was really curious the first time I saw her cooking this and seemed so good that I wanted to try it too! Hope you will enjoy it as much as I do…

Ingredients:

  • 4 potatoes
  • 2 onions
  • 2 garlic cloves
  • 7 bacon slices
  • 500 g corn
  • 1 vegetable stock cube
  • 1 chicken stock cube
  • 2-4 tablespoons olive oil
  • 50 cl water
  • salt & black pepper

Recipe:

Cut the potatoes in small dices and the bacon in strips. Chop the onion and garlic and brown them with the potatoes and the bacon in a sauce pan using olive oil. When they have a nice color, add the corn and the water with the 2 stock cubes. Mix everything and add salt and pepper as you like (for me: 1 teaspoon salt and 2 tablespoons black pepper). Cover the sauce pan and let it stew for 20-30 minutes. It is ready when the potatoes are soft…
