Spring Rolls

Spring rolls need a little bit of time to prepare but they are so healthy and fresh… Moreover, you can add almost everything you want inside! I made some with chinese and red cabbages, mung bean noodles, chicken ham, mint and basil. You can do it totally veggie by removing the ham.

Ingredients for 10 rolls:

  • 10 rice papers
  • 100 g mung beans noodles
  • 260 g red cabbage
  • 50 g chinese cabbage
  • 3 chicken ham slices
  • 10 mint leafs
  • 5 basil leafs
  • 3 tablespoons chinese sauce
  • 1 tablespoon Maggi liquid seasoning
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds

Recipe:

Boil water in a saucepan and add the mung beans noodles. Immediately remove the saucepan from the burner and cover 4 minutes. Drain your noodles and wash them with cold water. Let them drain in a colander. Cut the red cabbage in slivers. In a bowl, mix the chinese sauce, Maggi, honey and sesame seeds. Add the red cabbage and mix. Let it marinate. Prepare your chinese cabbage leafs, the best is to keep only the little ones without cutting them. Cut your chicken ham slices in strips (you have to make at least 2 per roll so 20). Add some warm water in a big mixing bowl and place a humid kitchen linen beside. Take the first rice paper and plunge into the warm water. Use your hand to feel when ready (might be soft) and place flat on the kitchen linen. Add your ingredients on it, they have to be on the right side, a little less than an inch from the edge. Begin with the minth leaf, then the chinese cabbage leaf, the chicken ham, the noodles, the chicken ham again, the minth leaf and the red cabbage. Then, holding your ingredients in one hand, use your other hand to close the roll: begin with the right side and place it on the ingredients; take the top side and close on the middle, then, do the same with the bottom side; finally, roll it from the right to the left, always holding the main part to avoid you ingredients falling apart. Your roll is ready, do the same with the others. You will have 5 minth rolls and for the basil rolls, you only have to add one leaf per roll in the beginning. Enjoy your meal by dipping them in chinese sauce.
