Yellow French Beans Colombo

This summer, we have plenty of Yellow French Beans and Zucchini Flowers in our garden. There is so much that we can eat full meals of them every 3 days! Because of that, I have made a lot of different recipes with them like this delicious and super easy Colombo from the west Indies.

Ingredients:

  • 800 g Yellow French Beans
  • 20-30 Zucchini Flowers
  • 1 Yellow onion
  • 12 cl liquid cream 12%
  • 1 tablespoon Maggi liquid seasnoning
  • 10 g butter
  • 1 tablespoon Colombo
  • 1 teaspoon black pepper
  • 1 tablespoon poppy seeds
  • fresh parsley

Recipe:

Remove each end of the Yellow French Beans. Put them in a sauce pan and cover with water. Place it on the burner at high temperature until boiling, then, reduce the heat at medium temperature and let cook 12-15 minutes. When it is cooked, dry them in a colander. Remove the pistil from the flowers and wash them. Cut them in pieces. Peel and chop the onion. Place a big frying pan on the burner at medium temperature and add the butter. Than, pour the onion and mix with a spatula. Add the flowers and mix. Let cook for 1-2 minutes until it reduce, then, add the Yellow French Beans, liquid cream, Maggi liquid seasoning, black pepper and colombo. Mix and let cook 5 minutes. Serve in plates with poppy seeds and  some washed and chopped fresh parsley.
