Barley Soup
The last time I have visited my Canadian Grand Parents, my Grand Pa’ did his delicious barley soup for dinner. It was so tasty that I still remember the smell and taste today even if it was 4 years ago. Here is my version of Barley Soup because I have changed a few ingredients and also because his soup is so much more delicious…
Ingredients for 4 people:
- 1 onion
- 3 carrots
- 3 tomatoes
- 3 celery sticks
- 2 garlic cloves
- 120 g pearled barley
- 2 tablespoons olive oil
- 1 L water
- 1 bouquet garni (thyme, rosemary, sage and bay leaf)
- 1 chicken stock cube
- black pepper
Recipe:
Peel the onion, garlic and carrots. Chop the onions and garlic, cut the carrots in very small pieces. Wash the celery sticks and tomatoes and cut them in small pieces. Place a big sauce pan on the burner at medium temperature. Pour the olive oil with onion and garlic. Stir them 2 minutes and add the carrots. Stir again 2 minutes and add the celery sticks and tomatoes. Crush the chicken stock cube on it and mix with a wooden spatula. Add the black pepper, bouquet garni, pearled barley and water and turn the heat to high temperature. Cover the sauce pan and when it begin to boil, reduce the heat at medium-low temperature. Let cook 1h mixing sometimes. To check if the cooking over, just try a carrot bite.
