Orange Mousse
This orange mousse recipe for 8 people is delicious. Fresh, light and acid, this is the perfect dessert after big generous winter meals. You can add some orange zests on top or crystallized orange zests, even dark chocolate shaving.
Ingredients:
- 2 oranges
- 4 eggs
- 50 cl milk
- 125 g sugar
- 75 g all purpose flour
Recipe:
Separate the eggs whites and eggs yolks in 2 different mixing bowl. Add 50 g sugar to the egg yolks and whisk. Add the flour and whish again. Grate the orange zests and place them in a sauce pan with the milk. Press the orange juice, add it to the eggs yolks and mix. Boil the milk and remove from the burner. Add 1 milk ladle to the egg yolks and mix. Then, pour all the egg yolks blending to the milk in the sauce pan and place on the burner at medium-low temperature. Whisk until it thicken (the texture has to be like pastry cream). Pour it back into the mixing bowl and let cool down (at least 30 minutes). Beat the egg whites until stiff with the 75 g sugar remained. Then, add them softly to the egg yolks blending. Pour the mousse in verrines and place them in the fridge for at least 2h before serving.
